• 120-125 °F

    Sear on both sides over a very hot surface for one minute per side. The inside of the meat should be warm throughout and bright red in color.

  • 125-130°F

    Sear medium rare meat on both sides on a very hot surface for two minutes per side. The inside of the meat should be mostly pink. The ideal doneness for Piedmontese beef is medium rare.

  • 130-140°F

    Medium meat will be seared on both sides with a mostly light pink center. Cook for two and a half minutes per side.

  • 140-150°F

    A medium well cut will feature a thin line of light pink in the center of the cut. Sear over medium high to high heat for 2 minutes per side then flip and move to medium heat for an additional minute.

  • We do not recommend cooking Piedmontese beef past medium well. Due to the low fat content of the meat, it will not be enjoyable.

Tomlinson Family Farms’ Piedmontese beef is unique in that it has very low fat, is low calorie, and low cholesterol. Due to the incredible uniqueness of this breed, we have researched and experimented with different cooking techniques and come up with this collection of tips and tricks to ensure your eating experience is as amazing as ours!

Do not cook past medium well, meat will be tough from lack of fat

ALWAYS use some type of fat when cooking Piedmontese meat to avoid burning

Let meat rest for 3-5 minutes before slicing or eating to allow residual cooking. Remove meat when internal temperature is 5 degrees lower than desired, as residual cooking will finish the process.

Maintain usual cooking temperature, but be mindful of significantly shorter cooking times, as much as 50% less than traditional meats.

Frozen beef should always be thawed in the refrigerator prior to using. 30-45 minutes before cooking, place thawed, packaged meat on the counter to reach room temperature.
